My brother and I did the math on what this year’s steer is going to cost per pound of processed meat, and according to the yield percentage on last years, it should cost $3.25-3.50 per pound. The steer weighed 1190 lbs, and we estimate we’ll end up with around 350 lbs of meat each.

Our processors have gone up 10 cents a pound in the last short while. It was good timing to raise prices I reckon.

The packer we use has only gone up $10/head on the kill fee.
My dad has a steer that he’s been trying to get on someone’s schedule for a month or two.

His regular spots are booked out for a few months.
Every packer around here is booked up. We had to wait 8 weeks to get ours in, and the guy is now already booked solid through October. He has a huge deer processing clientele, so he’s not booking any cattle or pigs from November to January. Over the years, the USDA has squeezed nearly all the packers out in my area of East Texas, and the few that are left can barely keep up.

So let me get this worked out in my noggin.....we have a meat shortage and the local processors are booked months out for individual sales and processing. That sounds like a win for the buyer but sucks for the producers unless the ranchers are getting into the ranch to table thing I'm hearing about. (it's what we used to do back in the day. Buy from a local and process it)

Pretty weird ain’t it. The owner here and I were talking a few days ago about the pros and cons of changing up how we do things. May just try to cut all the middlemen out. Raise em here, feed em all the way to finishing, slaughter em and sell em. It’d be a bunch of work and take some planning. Might just try a few first instead of our entire calf crop. We sell about 600 calves a year. That’d be way too many to experiment.

A little more food for thought pertaining to booked up processors, I know several guys that have booked several kill dates at processors because they can get more for their cattle. There are people panic buying beef right now just like 22 ammo and there are guys charging near double what the same steer would bring in town.

I agree with your outlook and the gouging at the lowest level. That happened back in the 80's when the cattle market went tits up.
.25 cents a pound live weight was the price then. We bought a steer, butchered it with relatives that had worked in the processing business and never packaged it.
It had been vaccinated recently and stunk of the medicine. The dog wouldn't even eat it. We figured it was a downer that got something to put it back on its feet right before we got there.

I do think a local producer meat market would work. It would be in their interest to put on some good beef to sell. If they tried to sell bad meat, the word would get around quickly on social media.
We have a meat market a couple of miles from us. There is a constant flow of customers in and out with cattle that they buy not grow.

I’ve got a friend in the show steers business, and he also buys finished steers after the shows to have them processed for people. I’m not sure what he profits from doing it, but I think he’s mainly trying to help folks that want to have one done but don’t have the “ability” to facilitate the process themselves. With all the major shows and many of the county steer shows in Texas being cancelled, there was a HUGE number of finished steers on the market this spring, but from what I’ve heard lately, the supply has pretty much dried up.

I know a local family that’s already killing and processing their own calves, but their marketing program isn’t very good.

Sure glad we picked up a few head when we did, prices are on the rise for cattle sold on CL for butcher.. Our 76 meat chickens were delivered on the 7th and as of yesterday are running close to a pound a piece.. Roughly 350 lbs of chicken will go to the freezer come early July.. Pork will go in come freezing temps when I can process without being bothered by flies.. By that time I hope to have a small cold room that I want to double as a smoke house.. Wanted to upsize a chest freezer but chest freezers were all sold out.. Got 1 ordered that should be delivered in early July..
