I went to WalMart earlier and they had an entire case STUFFED with Smithfield pork products. I was so bummed I dont have more freezer space. I wish they'd sell all Smithfield pork all the time.

Now if they'd just start carrying pork bellies...

Sam's hasn't had any bellys the last 3 times I've been in including today. I'm thinking @KurtM has the right idea here.

Only place I've ever gotten them is Costco or the Asian market in Tulsa.

Both Cao Nguyen and the Chinatown market in OKC always carry stacks of fresh pork bellies (we were just there today) but I guess that doesn't do you much good being in Bartlesville.......do a road trip with a ice chest and purchase several then take them back home, throw them in the freezer and thaw when needed.

No, unfortunately. I did one a month or so ago, had been in my freezer forever. Nowadays, I don't want to make the 2.5hr round trip to Costco to risk them being out of briskets and pork belly. :(

Buddy and I just decided to raise our own pork belly's.
He is willing to do put up part of his property for a pen and I told him that I'd be a contributor of $$, equipment to put up a cover and labor.
He gets to do the feeding, etc.
He has been wanting to do the burial process to cook one for years with one of the pigs going to that purpose to satisfy that itch.
Second will be cooked spatchcocked over an open hickory fire like I've seen done in the past. 3 and four will hopefully pay for 1 and two. If not, we will get some great pork that tastes like pig used to.
Lots of pics to follow if this developes.

I have had pretty good luck with availability and prices at Harvard Meat Market thus far. However, I went in today and ground beef was 8.99 for 83% and 9.99 for 90% :| Hopefully prices get back to normal soon...
