That is my go-to place. I get a ton of information from their forum. My last batch of snack sticks turned out with tough casings.
In questioning their experts, I didn't cook them correctly. 2 hrs at 140, 2 hrs at 160, etc.
They have two brick and mortar stores in Wichita if any get up that way. Huge selection of spices that your can taste on the spot before you buy.
I use their jalapeno and high temp cheese recipe for my snack sticks, adding more garlic and black pepper.

Tried this one for a first time. Took a fresh backstrap and marinaded it in cheap blackberry merlot over night. Took some generic head country rub, added a bit of brown sugar and some cherry jam. Coated backstap well and placed in a smoker using mesquite and cherry wood at 145 degrees for three hours. Took off and put on a hot grill for approx 7 minutes on each side....
