That looks very tasty! Your dinner ware plate matches my style!

It was fabulous with plenty for the food saver /freezer and lunch. The onion, pickle, fresh jalapeño is my wife's addition and it really does add without masking the base flavor.

As far as the plate? Spend all day cooking, monitoring, waiting, etc - ain't nobody got time for dishes after that!

Pellet grills are indirect heat, almost convection oven style.

Ah. A friend has a pellet smoker that can do direct heat if you remove the diffuser plate, so i wasn't sure if yours did too.

Basically we bring them up to temp indirect, move the plate and kick it up as high as it goes.

One thing you could always do is put a cast iron skillet in in the grill and use it to sear on since it'd retain a lot of that heat when you kick it up. (If you required the 'grill' flavor, of course)
