Yeah no grandma's recipes -- my grandma very nearly died from botulism. From her home canned green beans. Thanks guys! I'll check out the link GeneW.

I am ashamed to say I haven't since I was a kid. I'm scared of pressure canners but have decided to bite the bullet. Have canner and jars, so I am about to venture forth ... Lol ... And am looking for tips, tricks and recipes, if you have them.

I'm gonna try ground beef first ... But will eventually venture into chicken. They have some Cornish rock chicks at TSC that want to come home with me something fierce! Lol
Have you ever had meat in the can?

Both of my grandmas canned extensively, and nobody got food poisoning from their food, so...
Mine too. Every fruit and vegetable known to man but never once did they can meat, at least in my lifetime. I think they were just too happy to have freezers which they grew up without. Meat was always frozen and the veggies too when they didn't feel like canning. I'd pay big money to have their recipe books but they got lost along the way of time. :(

I've canned a ton of chili, Grandma used to can pork sausage. You OSU extension office is a great source, and pressure cooker manufacturers usually have tables to refer to as far as pressure/time/per whatever it is you're canning.

FWIW - it's very satisfying to simply open up a jar of deer chili you killed, cooked and canned yourself.

FWIW, most will not like the texture of canned ground meat.. If your being tube fed, spoon fed or sucking a tit you maybe ok .. It would be the very last thing consumed here.. You ever had a jack in the box taco with the beef like paste ?

I have canned my own hamburger and beef cubes. It tastes like canned meat. I have used the hamburger to use in tacos. Season it up right and it'll get the job done. I use the beef cubes for adding to my home canned vegetable soup. It is what I call the original homestead MRE minus the preservatives. I also can my own chicken and beef broth/stock.

There are a lot of picky eaters from what I could tell in the steak thread.

Wondering if anyone's ever heard of a book called "the Encyclopedia of Country Living" By Carla Emery? It's a big book
and it has just about everything about everything.
Not cheap but worth it.
