My only experience with tongue was as lingua tacos as other have mentioned. If it wasn't for the fact that I knew what it was already, I probably would have thought it was some very tender brisket. Depends on how it is cooked and prepared. The beef spread sounds good. I imagine it would be like potted meat except less gross :-) For any kinda of tacos including lingua try out Taqueria Sanchez on NW10th between Meridian and Portland on the North side of the road (look for the Lucky's sign). It is a permanently parked taco wagon. Heaven on earth I tell you. Tacos are $1 they have excellent burritos and tortas (sandwhich). My favourite in order of preference are: Steak (Asada), Chicken (Pollo), Pork (Pastor), Tongue (Lingua). They also have some other "head" meat that I haven't tried, cheeks? brain? not sure. Also, I would take the Linqua taco over any Taco Bell, Taco Bueno, Taco Mayo tacos anyday. It would be tough decision between lingua and Taco Cabana steak fajita tacos, though.
