You are going to want enough coals to able to shovel some of to the side and use them to cover the prepared tongue.</p><p>You will want to wait till the fire has burned down to coals, this will take longer if using seasoned hardwood.</p><p>You are going to want about 2-3 inches of coals under the tongue and another 2 inches over it while it is cooking.</p><p>Once yo have a bed of coals ready place the prepared tongue on the lower bed of coals and carefully cover with the remaining coals.</p><p>Shovel a thin layer of dryish dirt over the coals.</p><p>Cooking time is approximately 3 hours.</p><p></p><p><strong>To prepare the tongue for cooking</strong></p><p></p><p>Tongue can be seasoned to preference as well as using inject-able marinades.</p><p>Wrap tongue in thick sliced bacon hold in place with toothpicks if needed.</p><p>Quarter up 2-3 medium onions, 2-3 large bell peppers and a couple of jalapeno peppers, lightly salt and pepper and add any other seasoning you think might be good. </p><p>You can also add potatoes cut into wedges or whole new potatoes (I prefer to use the red skin new potatoes)</p><p>Wrap beef tongue and vegetables in 3 layers of well soaked banana leaves or if you can't get them 3 layers of heavy duty aluminum foil will work but it isn't as traditional.</p><p></p><p>In the prepared fire pit lay a very thin layer of dirt over the bottom 2-3 inch layer of coals. Place the package on that and then gently shovel the coals you set aside over the top of the package. add a thin layer of dirt over the coals and you are done for about 3 hours.</p><p></p><p>After 3 hours carefully pull the tongue out of the ash hole, gently because you don't want to tear the wrapping and get dirt on your food.</p><p></p><p>carefully unwrap the tongue and vegetables, remove the bacon and vegetables from the wrappings and throw that nasty hunk of meat to the dogs and eat the bacon and veggies.</p><p></p><p><img src="/images/smilies/biggrin.png" class="smilie" loading="lazy" alt=":D" title="Big Grin :D" data-shortname=":D" /><img src="/images/smilies/biggrin.png" class="smilie" loading="lazy" alt=":D" title="Big Grin :D" data-shortname=":D" /></p></blockquote><p></p>
