I am with you on this. I sold all of my Tupperware guns and when to 1911's and I only own Kimber Firearms.
They fit, function, just feel like a natural extension of my hand.
1911's built by quality smiths can be truly amazing. Production stuff just does not compare, and yes you can tell a difference when shooting them. That being said there is nothing wrong with a lot of the production guns. My STI Trojan is a quality gun, I saw a recent production Colt a few days ago which also seemed nice, I also like the SA Loaded models and TRPs. Base model Kimbers are fine as well, but I wouldn't recommend anyone buying their expensive guns. Above that I like the Dan Wesson's and the Baers. Above the Wilson semi custom level you aren't really buying that much more quality in parts or functionality, you are paying for extreme attention to detail, and those guns built by real artists are just beautiful.
