It was well marbled so I marinated it for three hours this morning, put it on the pellet grill at 250* for three hours uncovered with Head Country seasoning, then used the Texas crutch for an additional 2.5 hrs. Dang that thing was good. Literally fork tender. Don’t know if I’ll ever buy a brisket again that’s more expensive, and has 30% waste after trimming the fat.</blockquote>
