Got around to trying a smoked queso this weekend.

It is 100% recommended that you try this. Super simple prep & about a 2 hour cook time.

First try was outstanding.
Now it’s time to experiment.

That looks frigging fantastic!

Just curious if anyone has tried adding some sodium citrate to cheese or queso to keep it smooth and non-clumpy and easier to utilize for dips and such?

I was worried about that. However, I was rather surprised at how smooth it came out.

2 lbs Velveeta cubed
8oz pepper jack cubed
1 lb ground beef browned & drained
1 can fire roasted tomatoes w/ liquid
1 can cream of mushroom soup + water
1 jalapeño diced
1 small onion diced
1 tbs black pepper
2 tbs minced garlic
3 tbs KosmosQ hot dirty bird rub

Throw it all in a foil pan.

Smoked at 250F with Oak for 2 hours stirring every 30min.

Came out great. Next time it’ll be hotter.

Personally I would go with sausage instead of the ground beef, and I'd probably do more jalapeno, but I'm gonna try that next time we are allowed to have a gathering. You know, once the pandemic is over. lol

How well does it store/reheat?


Edit: I’m usually only cooking for myself. If I eat they much queso, I won’t go #2 for a week.

ETA: where'd you get the KosmosQ rub? Haven't see that one.

KosmosQ is a guy out of Tuttle. There’s a shop off I240 right near H&H. Or you can order it online.

Made it Sunday. Has come out of the microwave tasting just as good and still fairly smooth.

You’re absolutely correct. I just didn’t have any chorizo on hand or I would’ve used that.
Next batch will have more jalapeño and probably serrano......and probably rotel with green chilies.

The recipe I used makes a good party sized amount. I’ll half it next time for having it around the house.
