A 1 lb roll of Jimmy Dean sausage on the smoker makes a great appetizer.

Be sure and get an early start so that you can have this as a go along item to “wash” it down: :wink2::rollingla

I can’t do anything maple syrup. Sweets and I don’t get along. Didn’t even care for candy when a kid.

You just haven't found your sweets yet... mix about two cups sugar with a bottle of cabernet, put it on stove to dissolve. Take a pork belly, skin it, cube it, toss in sugar/wine. Bring to rolling boil, back off to gentle boil, let cook and reduce for about an hour. As soon as you start seeing carmelization stick to the pork belly, plate and serve. It's way more savory than sweet.
