Yep... Roasted poblano. It's a Kent Rollins recipe. I modify it just a little bit to suit my taste. It's fantastic.

Funny story about the first time I made this. It was just me and it made a lot. When it was done I took some over to the young couple next door before I even tasted it.

Went home, had some for dinner... DAMN! It was so good I was debating with myself if it would be too tacky to go ask the neighbors if I could have it back...

Gonna have to try the smoked chuck roast.
You guys doing about 1-1/2 to 2 hours per pound @ 225 degrees ?
Internal temp around 195 ?
