Kept it simple tonight. Big pot of navy beans with ham and onion, rice and cornbread. Good eats.
No pics, but we had lunch at the Bricktown Brewery today. Since the wife doesn't eat beef, I stopped making meatloaf at home. Trying meatloaf at a restaurant is kinda like playing craps --- it's hard to predict the 'outcome'. Well, I felt bold and ordered their "Big Mike's Meatloaf". Holy, smoly!!! That was probably the best loaf I've ever had!! The slice was bacon wrapped with a chili sauce glaze. Also looked like it had been treated to a flat-top heating/finishing. The meat was course ground beef and pork. Fabulous!!

My mom know that was one way to get me to go home. Now I have to make them myself.

Awhile back someone asked about easy dinners for when you do not feel like cooking. I made this tonight and it came out great if a little to spicy for the wife. (that means it is just right) Boneless skinless chicken breast were tender and juicy. I used potatoes, carrots and zucchini because I had some that needed to be used up. Put the mix in a bowl with a little olive oil. Coat the chicken and then the veggies. Put on a foil lined sheet pan for easy clean up. Very easy and tasty.
