Do you call it a fajita or a taco?

Used some beef short ribs I didn’t know what to do with and trimmed the meat off them. Onions and green bell peppers… Topped with fiesta blend cheese. Wish I would have had some mushrooms.

Anyone ever made a Beef Wellington? This was my first one I made it for Christmas dinner. Learned a lot, can't wait to make it better next time. It's the best thing I've ever ate. Gordon Ramsay says it's the ultimate indulgence, I don't think he's wrong. OMG words can't describe how good this was.

I don't pay a lot of attention to this thread because I can't cook, but dang, those look good. However, the wife just said that bacon wasn't really good for diabetics.

Good job @Beau Beef Wellington isn’t an easy one to be sure. Most folks have a tendency to undercook the meat but looks like you nailed the doneness. Yorkshire pudding with a beef tenderloin or Spencer roast is another favorite of mine.
