Much like learning how your rifle shoots, and reloading your own rounds, keeping good records and monitoring temps continuously makes a monstrous huge difference. Each smoker reacts different based on your pellets, your location, etc. You can probably achieve 80% of the results of the Savannah Stoker with the Ortech, provided you have a really good thermometer. I use a Fireboard which was a phenomenal investment in my BBQ efforts.</p></blockquote><p></p>
