Game Camera - Bird Watching

Say what you will but I enjoy bird watching down here in Austin. There are many varieties that you just don't see in the wild where I'm from (Kansas City), including some parrots. I've been thinking about game cameras because some of the birds that come feed in my backyard are really elusive and infrequent. After looking at them online I was struck by an epiphany! I belong to a a forum loaded with people that probably have lots of experience with these. I am wondering about...

1. Best quality optics.
2. Video capability.
3. Ease of download.
4. IR capability
5. Sensor sensitivity (do I get pictures of leaves falling, limbs swaying, etc)

Best overall camera considering these things?
