Going to Vegas next week - where to eat? What to see? Cohiba, you out there?

I tend much more towards ethnic food (Mexican, Latin, Thai, Vietnamese, Szechuan, Indian, Ethiopian, Middle Eastern...) than American. But greasy spoon American diner fare is great as well.
