From the Coyote Cafe(in Sante Fe New Mexico)cookbook. I have made this numerous times and like it!!! ***Make it at least 30 minutes or longer before you want to eat it. Let the ingredients mingle in the frig**** 2 tablespoons of diced onion(white) 2 cups tomatoes chopped into 1/4 inch cubes 2 tablespoons finely chopped cilantro....just the leaves, not stems. 2 teaspoons sugar 1/4 cup Mexican beer....I use Tecate or Modelo Especial. You might try a dark beer......Bohemia/Negra Mdoelo?? 2 teaspoon of salt juice of 1 lime **2 serrano chiles finely chopped....less heat use one. More heat, use a jalapeno or two. I like the serrano because of its flavor and refined heat. Put the onion in a strainer, rinse with hot water and drain. Combine all ingredients and mix well. Let it sit in the refirgerator for at least 30 minutes before serving. Drink the rest of the beer while waiting!!! Add just a little more sugar if it tates acidic. Cohiba
