Sunny side up. I cook them in my egg pan over low heat with just enough butter to cover to bottom when melted, adding the egg right before the last bit of butter melts. I'll balance the pan over the heat until the whites set just enough to hold the yolk in place in the very center of the pan. Cook until the whites are set and then lay over a piece of buttery toast and sprinkle on a bit of salt and pepper. Eat around the yolk, being careful not to break it, until all you have left in your hand is a round piece of toast with a jiggling yolk on top of it. Pop the whole thing into your mouth and squish it against the roof of your mouth with your tongue. I love it when the hot yolk bursts all over my mouth like a big, juicy......... ........ ............ water balloon. I don't care for scrambled. I did when I was a kid, with lots of ketchup. My wife finds it odd that I don't like beans or scrambled eggs, yet I make the best beans and scrambled eggs (separate dishes) she's ever had. I do like eggs over hard, but prefer sunny side up. I also like hard boiled eggs sprinkled with celery salt.
