Kitchen and fillet knives get an 18° bevel and pocket/camp knives get a 22° bevel. I shave with a straight razor from time to time when I’m feeling manly <img class="smilie smilie--emoji" loading="lazy" alt="😬" title="😬" src="https://cdn.jsdelivr.net/joypixels/assets/8.0/png/unicode/64/1f62c.png" /> and that I sharpen to a 5000 grit (whetstone). Everything sees the canvas then leather strop and will shave the hair off the back of my hand.</p></blockquote><p></p>
