The way I have done it for decades.
Plastic wrapped I roll the meat one way then turn it and roll it the other way and then cut the plastic wrap with a knife ..Much easier than tearing against the serrated steel edge of the package.
Then Fold the sides over and freezer paper wrap it then label it with what it is and date.

No air gets in with the plastic wrap method and the freezer paper is coated on one side.

Then turn the meat and wrap the other direction.

I vacuum pack the harvest meat and store bought bulk. After initial cost of the vacuum it is cheap and lasts for a couple years maybe longer, never had any meat for more than 2 years thus far.:cool:
