Does anyone use a earthen Root Cellar? Hillside or bellow surface?

No but I fell into one once while pheasant hunting. It got pretty exciting for a few minutes!

Wood roof/floor of office. I'll insulate with closed cell foam.

My grandparents (the dairy farmers in Okay) had one. Hillside. I would LOVE to have one but man ... I dunno how Grumpy would feel about me mounding up a bunch of dirt in the backyard.

This is an interesting topic for me as well. I have considered building a 12 x 12 garden shed with a concrete foundation and pad under it. I was thinking it would be over 8.5 feet deep on a raised slope close to my cabin. insulated shed floor and two pipes to the outside, one to bring in cool air and the other to exhaust warm air. I'm unsure about humidity however.
