Got a question for the wild game cooking gurus. Son-n-law gave me a few pounds of jalapeno cheddar smoked sausage made from a hog he shot. I fried some up this evening since the wife is gone tonight. Taste great but it is so tough it is hard for me to chew.

Anybody know a way to cook it that will make it more tender than cutting and frying it?

My guess it was either blended too lean or smoked at too high temperature. Not much you can do now but put it in a slow cooker.
You can probably do that and then either quick-fry them (for some crispiness), or stick 'em under the oven broiler for a few minutes.

Sweetie use to cook country-style ribs in the slow cooker, then drizzle 'em with BBQ sauce and broil 'em until brown.
