5am came way to early this morning. BUT, I bounced out of bed like it was Christmas morning. I even woke my Lab up. He wasn't to happy.
The Setup. Coals were just put in the smoker and a couple of chunks of Hickory placed on top.

6am and the brisket hits the grate.

4.5 hours in. Just about to flip the brisket.

All done. I went ahead and pulled it at 190.

Flavor is a 10 out of 10. tenderness various from 5/10 to 8/10. The thiner part of the brisket dried out a little bit. Not to bad though still good enough to devour.

The really bad part is that other than what I ate of it as a late lunch, it won't be touched until tomorrow.

Eating burgers tonight at my mom's. But tomorrow we have a pool party after church. It is there where this brisket will be devoured. Just needs a little while in the oven before eating.

Yes I know it is a crime but it is the only way.

Looks good. My wife got me the same grill 2 years ago for fathers day. Had to replace the tires and when it heats up the lid gets stuck. Worked my way around both. I love real grills and not that gas stuff.
