I thawed out some fish I thought was Gar and turns out it was not.</p><p>I was ready to make the stuff so went ahead.</p><p>Sorry that the measurements are not exact as I just began tossing things in.</p><p></p><p>First up was I boiled the fish for 7 minutes then simmer for 3 and added creole and some chopped Jalapenos and red bell peppers and celery.</p><p>I figured it would season the fish but it did not.. made the house smell good though not like boiled fish.</p><p></p><p>In a skillet I added some veggies I chopped in the food processor to very small.</p><p>Red and yellow bell peppers from garden and red and green Jalapenos from garden. yellow onion and a couple stalks of celery.</p><p></p><p>Cooked it for about 7 minutes.</p><p>In the microwave I have 2 potatoes getting nuked instead of boiling them.. boiling will also work.</p><p></p><p>Remove peelings.</p><p>Now everything is cooked the veggies and potatoes and fish.</p><p>Potatoes got processed in food processor as did the fish.</p><p>It all went into a large bowl and I added .</p><p>Creole seasoning. about a table spoon</p><p>Dill weed. a teaspoon and a half.</p><p>Garlic powder. about 1/4 teaspoon.</p><p>Black pepper. 1/4 teaspoon or so.</p><p>yellow corn meal mix. 2 table spoons.</p><p>2 eggs.</p><p></p><p>All got mixed up and rolled into balls about 1/2 the size of a golf ball. like small meat ball size.</p><p></p><p>Dry, wet, dry time. </p><p>Then I rolled them in flour seasoned with black pepper and a pinch of salt.</p><p>Then into beaten eggs.</p><p>Then into a mix 50/50 of bread crumbs and Panko crumbs.</p><p>Those store bread crumbs you know very fine things.</p><p>I then let them rest in the fridge for 30 minutes.</p><p></p><p>Then deep fried in oil.</p><p>Wife wants me to smash some today a little flatter and cook in a skillet.</p><p></p><p>Man these are so good.</p><p>Just one more way to cook paddlefish.</p></blockquote><p></p>
