After eating at the 21st Garnett taco stands and getting my first taste of real street asada tacos....

Came up with my version .... only I cheated a bit by using pre-cooked fajita beef strips. quick and dirty, comes out right tasty. all without a trip to 21st Garnett.

peel and slice up one large carrot

sauteed over med/high heat with your favorite cooking oil

slice up one HOT jalapeno

add sweet onion and pepper

pre-heat your fajita meat in microwave if frozen

ready to add fajita meats

add fajita meats and simmer on low heat a few minutes

heat a large pan on high with butter, double layer corn tortillas

It looks delicious!

If you want to cook the meat yourself, try any decent but inexpensive beef cut (i.e. skirt or flank, sirloin, flat iron, etc.). Marinate the whole cut in

Small amounts of soy sauce, Worcestershire, liquid smoke if you have it. Add garlic (powder will work), onion powder, chili powder, cumin, lime juice, a bit of oil. Add Cilantro and liquefy the whole thing in a blender or food processor.

After it sets a few hours, grill (or cook in a hot skillet) until medium-rare to medium, and let rest a good while so the juices set up. Then slice or chop and serve on corn tortillas.



I will cook chicken similarly, but add a good amount of hot sauce (i.e. El Tapatio) instead of the soy/Worcestershire/Smoke mix and it ends up pretty good :)
