My wife and I got married over Thanksgiving weekend in 2003 so she cooks me a huge turkey meal every year for our anniversary. 
High five!
After eight years of marriage to the current wench I've yet to do anything for V-day for her. It would only spoil her. And since everyone else is doing something on that day it's a meaningless gesture of herd mentality. Instead, I do little things for her throughout the year which she seems to appreciate much more.
This is important indeed.
Personally I think V-day was invented by Hallmark, as was Mothers Day, Fathers day, etc...
How about a gift certificate to a spa? That way she can go when she wants to and you don't have to fight the V-Day dinner/movie crowd.
Get her a pink "Hello Kitty" AR-15 with a pink pistol to match.
I got my wife a gift card for a 1 hour message several years ago. She didnt use it and gave it back to me the following V-day. Well I'm not the message type of person so I didnt use it and I gave it back to her the next year. It was kind of funny until she actually went to use it and the parlor it came from was no longer in business. $100 gift card worth nothing.
I am recreating our first date, which was at boulevard in edmond, same booth and everything. I got her a necklace from helzberg that she can wear when we get married as it matches the colors she picked out and two dozen of the flowers she picked for the wedding which are out of season and I have to get overnighted from commifornia on monday so I can have the florist arrange and deliver them on thursday. I better get the max number of brownie points allowed to be given out at one time for this
