12-14 Gauge minimum to run in the walls...you'll be thanking me later.
I bought a full klipsch set from a fellow forum member...and ran 14 gauge from monoprice.com (highly recommended / Low Cost / Good Quality) and ran 65ft HDMI, 65ft Optical, 100ft Cat 5, and over 200ft of 14awg speaker wire. You must make sure it is CL-2 rated or inwall rated insulated wire.
I'll snag some pics of my setup in tonight if I have time.
EDIT: Also if you are using in-wall speakers in the future...land the wires and then make sure those joists get insulated if you are not on an outside wall. The person on the other side of the wall may appreciate the small extra cost of insulation to reduce sound transfer.
