Santa-Cali-Gon Days in Independence has always been the big thing for our family that weekend. Huge fair with the most rip-off tents I've ever seen anywhere, Midway, concerts, etc. Oh, and no entry fee either, for any of it. Just pay for rides.

Go eat at Garozzo's!!!!!!! Absolutely the best italian food I have ever had.
If you're into military history, the World War I Memorial Museum is worth a visit.
