I have cut butt hams and backstraps out, soaked them in salted ice water, draining water out daily for 3-4 days until water is pretty clear after overnight soak. I sell/sold the "organic" (his words) meat to a guy in OKC who is always wanting more. I know that is not exactly the answer to your question, but it is testament to someone's desire to acquire more.Hey OB, you ever eat any large boars? If so, how were they? Just curious
