Use creamed corn in your Jiffy mix and two eggs for a binder and 1/2 stick butter. Sweeten with 1 TBSP sugar.

I use Shawnees best corn meal mix, add cheese, a can of corn and some diced jalapenos, oh, also finely dices onion. No sugar, sugar doesnt belong in my mexican cornbread.
Cook in a cast iron skillet. Its moist and thick every time.

I usually season with Avocado oil. This makes me feel better.
