I am curious how commercial kitchens would adapt. I have yet to walk into a high volume working kitchen that used anything other than gas.

I’m assuming they’d adapt as one does. They do make commercial induction appliances. I’d wager they might even commercial kitchens just a bit more comfortable. In any case it’s hardly the end of the world.

I'm envisioning the new Tesla Electric Stove that is touted to be able to cook 300 breakfast servings before having to be recharged - several different models available 🤣🤣
