why is democracy held in such high esteem when it's the enemy of the minority and makes all rights relative to the dictates of the majority?

Without an educated public Democracy is little more than mob rule - which is why the founders created a republic.
They designed the republic so that the people's house was elected and the state's house was appointed. An appointed body is not beholden to the mob and can offset the ignorance inherent in the actions of the voting mob.
We can see the results of changing the senate to an elected body as now the entire Legislative branch as well as the executive is beholden to the mob. The USA has been on a steady decline since.
The mob wants things. Elected officials buy the mob's votes by giving them stuff. More often than not that stuff is not what's best for the country.
We've passed the hump when the mob figures out that they can vote themselves benefits out of the public treasury. From here on out its all down hill. We'll eventually hit bottom. The only question is WHEN?
While too many folks forget that we are in fact a Republic, there is a growing movement that forgets that we are a democratic republic.
Limited government under the rule of one person isn't exactly a lot better than unlimited government under the rule of the mob (especially when you take into consideration that if there is one ruler/ruling-party - they can change the limited-government rules without input from the people).
There is no perfect system, but ours is probably the closest on the planet. The problem is that it cannot be forced - which is why we should stop forcing it in places like Iraq, etc. If you have not fought for your own liberty, then like welfare abusers, you'll never truly appreciate it.
“It has been said that democracy is the worst form of government except all the others that have been tried.” Churchill
