How You Like Your Jerky?

Friday night I will be at McNellies in Tulsa in full regalia after setting up for the gun show. Well, not full regalia but at least in one of my many kilts.

Excellent! I plan to be there as well.

Rotated the trays and flipped all the slices over. Probably about 3 more hours for all of it to get done. Some will be done in an maybe an hour.

I like the dry, thin, crispy stuff. Every time i drive back to NM, I stop and get about $60 worth of red and green chile jerky from Vigil's beef jerky. AMAZING!

Moist enough to chew for half an hour or so. Dry stuff turns to dust, then sucks all the moisture out of your mouth. Better to gnaw on it for a while.

I slice mine with the grain. It's called jerky for a reason.
I've got about 30 lbs of deer and elk jerky that will go into the cabellas bulk dehydrator.

I do mine where it's real chewey.

My recipe includes teriyaki, soy and worcestershire sauce.
Sprinkle some garlic powder And onion powder.
