I slice mine with the grain. It's called jerky for a reason.
I've got about 30 lbs of deer and elk jerky that will go into the cabellas bulk dehydrator.

I do mine where it's real chewey.

That's what's up.

I prefer mine chewy, too, and somewhat thick cuts. I hate that hairline thin jerky that might as well be brown notebook paper. If anybody ever buys Fesperman's beef jerky at the State Fair or Beef Jerky Emporium, that has the perfect consistency and is exactly how I cut mine. Fesperman's Peppered jerky is also the second best beef jerky I've ever tried, next to homemade. It's even better, though similar, than the Hard Times jerky found at gas stations.

During high school the coaches would all get together and sell thin, crispy jerky as part of a fundraiser. I always like that way more than the chunky stuff that seems like it's still moist.
