I had no idea hunting deer size game with a Co2 gun was a thing until now. I actually got an email from Pyramid Air (where I ordered my air rifle) about the same subject after I saw your post talking about it. They have some guns shooting a 500g projectile at 1000 fps!
They are PCP not CO2....big difference but same concept.

To the OP, you should look into the blowback Glock CO2 pistols...I have several (am even contemplating selling one of them on here since I went crazy and got more than I need). I will try to post pics when I can in this thread just for show, but they are real fun. I also have the non-blowback G19 shown above and it is super accurate for a smooth bore BB pistol.

To the OP, if u like CO2, look into the Crosman 2240...you can build it into anything you like; it is sort of the "Ruger 10/22 of airguns". I have several and some are carbines which are real fun. I have been meaning to post pics of those as well. LMK if anyone interested in hearing more.

I got a Crosman 2240 with an 18" barrel, shoulder stock and supresser. Cleaned up all the rats and mice in my yard without anyone being the wiser. It runs off CO2 cartridges, so probably not for small game larger than squirrels, but rats and mice look out.
I had a 2240 I converted to a 2250 (kit available online) and I was doing ~565fps w/stock components and a 14.5" barrel w/ LDC (suppressor). Definitely a rat catcher...I think they even nicknamed the 2250 "rat catcher" when it was still sold. I eventually put a 16" .177cal barrel on it and it is a 625FPS tack driver that could probably still do rat/mice pesting.

I bought the Sig MCX BB gun from Wilshire and it has not been able to fire a complete magazine yet.

Frustrating but it’s amazing finish and very similar size to the real deal has me hoping I can get it broke in eventually.
