Finding all kinds of stuff at our daughters including all the I stuff. My question is, is there any way to get into them so my wife can use them?

Wife's I-phone's screen is out. Can she just transfer her sim card to another phone? Any help would be appreciated.

As long as the new phone uses the same physical format of SIM, yes—basically, as long as her SIM will fit in the tray/slot of the new phone, it should work. Some newer iPhones use an eSIM and don’t have a SIM slot, but your carrier should be able to help you transfer to an eSIM.
