This is a very basic Italian stew.
2 Tbs of olive oil
4 cloves of garlic, minced
1 1/2 lbs boneless pork ribs, cut into bite sized pieces
1 yellow onion, diced into large pieces
2 14oz cans of fire roasted tomatoes
1 cup chicken stock
1/2 jar of pepperoncini, stems removed and chopped in half
salt to taste
Brown the pork in the olive oil. Add the garlic and allow to cook together. Then add the onion and saute/simmer until translucent. Add remaining ingredients and simmer until pork is tender and stew has thickened.
