Kielbasa and Cabbage Soup

Cold and icy weather is coming, so it's a perfect time for a comfort soup.



1lb Kielbasa - sliced
1 Yellow onion - chopped
4 Carrots - peeled and sliced
3 large Red Potatoes - cubed
1/2 head of Cabbage - chopped
3 cups of chicken stock
1 Tbs vegetable oil
1/4 cup of flour
4 cloves garlic - minced
Salt and Pepper to taste

In a stock pot, add oil and sausage. Saute until heated through. Add garlic and saute for 1 minute. Add onion and carrots and saute until onions are translucent. Add flour and saute until flour soaks up oil and grease. Add chicken stock and potatoes and simmer. When potatoes are nearly done, ad cabbage and simmer until cabbage cooked but not mushy. I prefer my cabbage to be firm.
