My opinion is that if you're going to get them pocket-knives, I'd go with nicer ones that will actually last them a lifetime rather than worrying about getting them engraved (there are local places that can engrave for you if you really want to get them personalized).
Pick what direction you want to go in the pocket-knife world (slip-joint/locking, traditional/modern, "tactical"/utility, etc.) and a budget and you've got nearly endless choices. There are some good places to order online that ship quickly (and save you enough that you can upgrade everyone in quality).

I like the shave idea, may be the only chance the younger ones get to do this. Knives are always cool.
