Hogs are like armadillos on steroids and I treat them both the same way to keep them from rooting up our place. The sons of one of my friends are hog hunters, but they do "catch & release" like bass fishermen, except they do kill a few to eat occasionally. One of them told me they had released a few recently (not near our place) but they would not be able to do that after some regulation goes into effect in November.
I've had wild hog before, smoked with BBQ sauce - very good tasting.
I ated the one i coughts...good eatin. Put it in omelet and other stuff. Its good.
Like the meat of any animal, the taste can depend on what they have been eating.
I did not see any mention by the OP of releasing the hogs . Kept in pens, hogs are hogs. Releasing even domestically produced hogs from captivity is the same as relocating the feral ones. A domestic hog will get coarse hair and a straight tail within a couple of months in the wild. Very adaptable critters.
Last one I cooked, I was told by several people was the best BBQ they'd ever had.
