I've had moose several times and it's the very best wild game I have ever had. My BIL harvested a bull in Western Wyoming several years ago is the only reason I got the chance.

I have family in Eagle River AK, and go there as often as I can, usually yearly. I have had smoked elk, moose, bear, caribou, and a variety of fish. Smoked Salmon is among my favorites, with Moose and Caribou being up there as well. Mike has a small smoke house, and they live year round on the game he harvests. Alligator tail is my favorite of the gator stuff, just like a better grade of white chicken to me. Buffalo was good the two times I ate it. Bear, if fixed properly is great. If the person doesn't know how to prepare it, turns out awful to me. I have eaten a variety of meats not normally on the menu, including young plump dog, which was very good until I found out what it was. A man who worked for me several years ago barbequed an Armadillo and brought it to work. It looked like BBQ pork. I didn't eat any of it, but the others on the crew that did liked it and didn't believe it was armadillo. I had heard the old tale about armadillo carrying the leprosy germ, so I was afraid to try it. I still don't know if they do.
