When talking ammo what's the number of grains mean?

a grain is a measure of weight. Like pounds, ounces, etc.

bullets and powder are both weight based on grain amount.

there are 437.5 grains in 1 ounce .

Grains on a current ammo box decription is the weight of the bullet.
Old time ammo was named for the amount of powder in them.
45/70 = 45cal with 70 grains blackpowder.
30/30 = 30 cal with 30 grains blackpowder.
but they would still list the bullet weight seperate.
