I grew up eating bison often, dad had a friend who raised them. I'll stick to great bred and fed out angus lol. Bison isn't bad, but it's not a well bred fed out beef for sure.

We’ve been eating half of a 1200-1400# steer every year for the last several years, and that equates to 225-250# of meat. If you cook at home, it’s not a stretch to consume it, but if you eat out a lot, it’s probably going to be too much for you.

Usually cook here 3 times a day.
I love leftovers, when I make a meat loaf it is a big one.

Do we have to use firearms, or can we hunt them the traditional way, by running them off a cliff?

We have a cliff used for that purpose North of Ponca along the Arkansas River.

One would have to be around the home a lot to eat all that. We have half of last years buck still in the freezer with another this year at the processing plant.
The city slickers we travel with won’t eat wild game.
Back in the working days, 3 deer were gone in one season. Did a lot of big pots of chili, burger lunches, burritos and so on for the guys at work and so on to get it all eaten.

I have a friend who shot a bison in the South Park area of Colorado on a private ranch hunt about 20 years ago. He used my Marlin 1895CB .45-70 to shoot it. I bought about 50 lbs of the meat from him and it was fantastic. I miss having elk in the freezer, too.
