Squab is a baby pigeon, not an adult. They won't taste the same. Dad raised and trained homing and tumbler pigeons. And ate the occasional squab. Pigeons are also known as "Rats with wings." They are friendly if you feed them, as OP has already noticed, and a flock of pigeons makes friendly and comforting noises, but they also produce tons of bird crap. Guano. If you collect and leach it, it's a great source for nitrates for making "Holy Black" gunpowder.

I would not suggest anyone get that heavily into our hobby... ;)

Putting up with a little bit of crap to have happy children not a big deal.
If you do eat the old thing may I suggest skin it as it is way faster and then pressure cook
the thing then make pulled "Pork" by shredding it and adding BBQ sauce.
Bullseye BBQ sauce has the right balance between smoky and sweet and flavorful.

You can do that above to many critters and they all taste about the same.
Excellent sandwiches with some pickles and mustard.
