I don't know how busy you will be butchering steer for folks, but you can probably get as many deer as you want!
Local guy tried that. Butcher at Safeway.
He bought the box off of a reefer semi put an AC unit into it and went to town on deer. The state busted him for not having the proper sanitation blah blah and shut him down with a fine. The fine was more than he made plus what he paid for the reefer box.
It almost bankrupted him.
Cousin was raising tilapia and catfish in two seperate ponds. They built a cleaning building thinking they were going commercial. State came in and said they couldn't share the water supply system nor the waste water with the home. Each building required a private and separate source of supply and drainage. The cost was too prohibitive to make it profitable.
Getting a start isn't easy in the commercial business it appears.

I have access to good priced red iron, so lumber is out.. 4" sq tube, cut and turned up at each end for ski effect.. 3" open C purling in floor which will saddle and capture 3" foam board foil down, walls will be 4" open C purlin and saddle 4" foam.. Roof/ceiling 4 " and then all will be covered with foil tape to insure no leaks.. Foam will come from Taylor foam in okc.. Cut to size..
One thing to keep in mind is that if you really want it to get/stay cold, you need to prevent thermal bridging when framing and insulating. This is extremely important when framing with steel.

Great info.
It’s definitely one of those often overlooked things in building structures of any kind. Thermal bridging is the majority of the reason why you want your attic insulation to be completely covering your rafters too.

At this point in time I'm having doubts that our meat locker will ever materialize. I forsee even a greater need for it as times are panning out but we just will not have the cash flow to make it happen. Our current plan is to pick up some more of the needed tools and rough it from there. If by chance things change for the better in regards to the build I'll sure post it up.
