In this case, Amazon has good deals. Go To Amazon and in the search block enter "Augason Farms #10 can sale". I've been buying a few cans a month for a year now, only what is on sale.

What is the purpose vs a bag of potatoes?

Good for long-term storage and camping. When I open a #10 can, I portion the food out and re-seal in vacuum bags. Some foods don't like moisture in the air. My freeze-dried pineapple chunks are best when totally dry or totally rehydrated. In between totally dry and wet they aren't very good.
