Any bird who can fly from Canada to Mexico and back every year has a lot of dark slow-twitch muscle - which is why I prefer duck legs (lighter meat) to breast meat. They don’t walk to Mexico!

Yup. Rare duck breast is pretty much like venison backstrapIf it tastes like liver you overcooked it. Duck is to be eaten rare.
