I've never ate goose, but anything with horseradish in it has to be good. I love that stuff.
This dirty rice is awesome and simple. 1 pound of deer burger and follow directions on the box. Simple and great!

Elk Roast 3 Tbsp of Cajun seasoning, 1 Tbsp Seasoned Pepper, 1 Tbsp Minced Garlic, 1/2 Tbsp salt, 1/2 Tbsp Onion Flakes, 6 Tbsp Olive Oil mix all to paste coat roast. Inject 1/2 can or so of Beef broth. Wrap roast in 1 lb. bacon and secure. I set a couple small cut-off beer cans of beer above my heat source in my pellet grill. 225 deg until 150 internal. This 4.9 lb roast took 5 hrs. I like it at 140-145 internal but the G-kids said it was great.
