My AR with the proper bullet has only killed 11 to date. All one shot kills.

You could always buy a different upper for you AR in a larger caliber but between the 2 you listed I would go with which ever one you shoot better with

They look like dead deer to me. I'd assume that the 223 doesn't do a whole lot of damage to the meat around the entrance or exit hole.

I have killed deer with both calibers. Both work well. .270 or 30-30 would be better.

I'm trying to understand your post.
What puts the .223/5.56 round into the varmint class?
Yes, there are varmint rounds than be purchased, as well as rounds designed to kill deer, or humans.
A Barnes TSX is just one example. It WILL crash through the shoulder of a deer, screw up the innards of them, and exit leaving two wound channels.
The military must use FMJ. (well,most of them, but that's a different thread).
